I am having a cookout with about 5 couples and then my husband and I. We just bought a new grill yesterday and need to break it in before the party still! I am looking for a menu to serve to about 12 adults, there will be about 5 little ones but I will do hot dogs or something fun for them. I want something a little fancy and out of the ordinary, you know? I want to serve wine with dinner....kind of nice, but not steak for everyone nice.....any ideas? No fish, we are allergic. Only beef and chicken....|||Citrus Marinade
陆 c frozen orange juice concentrate
录 c vegetable oil (I use olive oil for this...)
录 c lemon juice
2 tb grated orange peel
陆 t salt
1 clove garlic, finely chopped

Goes great with chicken breast or tenders. Definitely do some sort of grilled veggie kabob -- I usually marinate in olive oil, lemon juice, italian spices, salt and pepper.

As for beef, you could always make burgers fancier -- either get a better grade of ground beef and/or do nicer toppings (goat cheese, or any kind of fancy cheese - there's a great one I get called double gloucester with onion and chive- portobello mushrooms, roasted red pepper, grilled pineapple slices)|||When it comes to BBQ, I can't think of a better chef than Bobby Flay. He's got a wealth of BBQ recipes on the Food Network Web site from his show, BBQ with Bobby Flay.

Here's a few that caught my eye: Sour Orange BBQ'd Salmon Taco with Red Cabbage Slaw and Smoked Chile Sauce, Grilled Pork Tenderloin a la Rodriguez with Guava Glaze and Orange-Habanero Mojo, and Whole Sea Bass with Charred Serrano-Basil Vinaigrette. Mmm... my mouth is watering.|||One half a chicken per person.

OR baby back ribs.|||Can you do shrimp? Shiskabobbed shrimp is always good and looks fancy on the grill....
Stuffed Mushrooms are nice on the grill, so are stuffed red potatoes with caviar.

Other then that, I'm more of a downhome BBQ Chicken Quarters and Brisket kind of girl...so I am not sure about fancy grilling fare!|||Prime Rib is fantastic on the grill!!!|||chicken or turkey goes great on the grill|||What about grilling a whole beef tenderloin, which is what filet mignon is cut from!?! You can just season it with salt, pepper and thyme or marinate it in advance. And then "packet potatoes" which is just a different version of home fries...in heavy duty aluminum foil that's either been oiled or buttered or smeared with bacon fat (best flavor), put sliced potatoes, chopped or sliced onions and then seasonings of your choice (salt, pepper, paprika, parsley, garlic powder, oregano, and other fresh/dry herbs if you have/like them). Then double fold the edges of the foil to make a packet. You'll want 2 or 3 packets for that many people (the little ones will like them also). I'd also serve a nice tossed or combination salad.

1 (5-6) leg of lamb, boned & butterflied
1 c. sour cream
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. EACH oregano, dried parsley & onion powder
Trim excess fat from lamb. Combine rest of ingredients and slather on both sides of the flattened lamb. Refrigerate (covered) overnight to marinade. Grill over hot coals about 20 min. on each side. Serves 6-8

PORK TENDERLOINS
Marinate 2 Pork tenderloins in a good marinade (I like Lawry's - many good ones); and put on BBQ rotisserie.....

GRILLED VEGETABLES
asparagus; red & green Bell peppers (cut in half); zucchini -- lightly coat with olive oil and sprinkle with oregano, salt & pepper & grill on both sides...

RICE ARTICHOKE SALAD
1 pkg. chicken flavored rice mix (like Rice-A-Roni)
2-3 chopped green onions
1 (6 oz) jars marinated artichoke hearts, cut up
8 pimento stuffed olives, sliced
1/2 tsp. eACH dry mustard, curry, lemon juice
1/2 c. mayonnaise
Prepare rice per package directions. Mix everything else in very well. Can be served hot, cold or ROOM TEMP.....

FROZEN CREME de MENTHE PIE
40 chocolate Hydrex or Oreo cookies, crushed
3 TB. melted butter
30 large marshmellows
3/4 c. milk
1/2 c. green Creme de Menthe
1/2 pt. whipped cream
Mix cookie crumbs with melted butter and press into 9" pie pan. (Save some to sprinkle on top) Heat marshmallows & milk in double boiler, until melted. Do not over-stir. Remove from heat and cool. Add creme de menth. Let set until thick. Fold in stiffly whipped cream and pour into pie shell. Sprinkle crumbs on top. Freeze until ready to serve. ......(MINT goes very well with the lamb)|||You could do kabobs. That's beef and fairly easy.

If you have no objections to pork you might also consider that.

Chicken is a good choice, but I suggest boned breast meat is easier to cook properly on a grill.

My personal preference is either ground meat--burgers in other words--or sirloin. You can cut up the steak into smaller pieces and have the effect of a lot of steaks. The tenderloin is a lot better piece of meat than the other meats on this cut, however.

If you have no objection to pork this is another alternative that is fairly easy to cook but needs to be cooked thoroughly.
